This 8-year-old Irish single malt comes from an undisclosed distillery, though as Niche Drinks founder Ciaran Mulgrew admits, the list of suspects is a very short one – since only Cooley and Midleton have the ability to supply an 8-year-old single malt, and while Mulgrew’s heritage is in Northern Ireland, he insists his whiskey was distilled in the Republic of Ireland – ruling out Bushmills as a source.

The nose is malty, sweet, and grassy with notes of straw, dried flowers, and hints of fudge, allspice, and butterscotch. The taste has a good buildup of allspice, vanilla, and a nice oakiness along with hints of fudge, butterscotch, and toffee. The finish is warm and smooth with a lingering spicy note of allspice, along with fudge, honey, and a touch of oak. (February, 2016)
