The Macallan 12 Year Old Double Cask. Photo ©2016, Mark Gillespie. The Macallan is known for its use of ex-Sherry casks, and this expression uses whisky matured in both European Oak and American Oak ex-Sherry casks. It’s different from the Fine Oak series in that there’s no use of ex-Bourbon barrels, and from the classic Macallan range with its emphasis on European Oak casks.

The result is a fruity and complex nose with a good balance of plums, vanilla, raisins, red apples, a hint of orange peel, muted spices, a touch of toffee, dark chocolate, and figs. The taste has a good balance of fruity and spicy notes with red apples, peaches, black pepper, figs, toffee, lemon zest, orange peel, vanilla, fogs, molasses cookies, and toffee. The finish is long with lingering fruits, a touch of black pepper, ginger root, tree fruits, raisins, and plums. (October, 2016)
