McGibbon's Provenance Dallas Dhu 1981. Image courtesy Skinner Auctioneers.This is a classic example of what the now-banned use of paxarette treatment did to Sherry cask matured single malts. The nose has notes of Christmas cake, figs, prunes, raisins, molasses, and licorice. The taste is dry and slightly astringent at first, then develops a spicy touch of clove along with prunes and raisins, and becomes very tannic and oaky with a thick and chewy mouthfeel. Water helps intensify the spicy notes. The finish is long and dry with muted spices, dried fruits, and an excellent balance. Outstanding! (November, 2015)
