This Irish Whiskey is a collaboration between Cognac’s Camus family and the Baring family’s Revelstoke Trust, which owns Lambay Island on Ireland’s east coast near Dublin. The whiskies for this blend come from West Cork Distillers in County Cork, and are finished in the Camus family’s own Cognac casks. Finally, they’re blended with spring water drawn from the Trinity Well on Lambay Island.
The nose has notes of honey, dried flowers, straw, vanilla, and a slight nuttiness. The taste has a good balance with touches of cracked peppercorns, honey, peaches, red apples, and butterscotch. The finish is nice and long with gently fading spices. Excellent! (March, 2018)
