This Bourbon is made by taking Jim Beam Bourbon that’s been maturing for several years and transferring it to a brand-new charred oak cask (perfectly legal under US rules – there’s nothing that says a distiller can’t switch whiskey to a second brand-new barrel in the middle of maturation). It’s designed to give the whiskey an extra boost of flavor, and the result is a Bourbon with a nose full of honey, molasses, brown sugar, ginger, pipe tobacco, and charred oak. The taste is chewy, thick, and spicy with black pepper, a touch of ginger, honey, molasses, dark chocolate, and pipe tobacco. The finish is long and spicy, but with a good balance of sweeter notes underneath. (November, 2016)
