Coppersea Excelsior New York Bourbon. Image courtesy Coppersea Distillery.This is a one-year-old Bourbon produced entirely from New York State, with the grain, water, and even the barrels all coming from within the state. The only exception was the bottle, because the distillery couldn’t source its bottles from an in-state manufacturer.

The nose is smooth with notes of vanilla, honey, charred campfire wood, and a hint of brown sugar. The taste starts off with a note of caramel cola, followed by intense spicy notes of cinnamon and black pepper. Brown sugar and caramel cola linger in the background with a slight lemon-lime tartness. The finish is medium-length and aromatic with lingering spices and hints of dried apples and caramel. While this whisky is young, it shows great promise for future bottlings. (January, 2016)
