Photo ©2016, Mark Gillespie, CaskStrength Media.This young Bourbon (matured less than 2 years) from Distillery 291 in Colorado Springs is finished with Aspen staves and reminds me of classic cowboy-style whiskey, especially since it’s bottled at 62.8% ABV. The nose is spicy with black pepper, cayenne pepper, dried figs, caramel, and clover honey notes. The taste…well, the spiciness makes even the legendary George T. Stagg and Booker’s Bourbons seem tame by comparison, with paprika and black pepper notes that cling to the tongue and let go reluctantly to reveal honey, caramel, and vanilla notes with a touch of dried figs. The finish disappears under the lingering spicy notes as they gradually fade away. A bit of water improves the balance and tempers the spicy notes.  (August, 2016)
